Roasted strawberry sweet rolls turn a pile of red berries into the coziest weekend breakfast you can pull out of the oven. Roasting the fruit first concentrates the flavor and pulls out the extra water, so the filling stays put instead of soaking the dough. The result is soft, tender rolls swirled with deep berry sweetness and a hint of orange.

Why These Strawberry Rolls Win Breakfast
- Roasting the berries first means a thick filling, not a soggy center
- Orange zest and juice concentrate brighten every bite
- The dough bakes up golden, pillowy, and pull-apart soft
- A pink strawberry glaze ties the whole pan together

This is the kind of bake that fills the kitchen with warm cinnamon and fruit. It feeds a crowd, and the leftovers reheat beautifully the next morning.
Always drain the roasted berries well; that extra juice belongs in the glaze, not in your dough.

Ingredient Notes
Here is a quick look at what makes this filling and dough work so well together. You will find the exact measurements in the recipe card below, so this is just a friendly rundown of the key players.
- Fresh strawberries are the star; roasting drives off water and deepens the flavor.
- Sweet roll dough with orange zest mixed in gives the rolls their soft, fragrant base.
- Frozen orange juice concentrate brightens the berries without thinning the filling.
- Honey brushed on the dough adds a gentle sweetness and helps the rolls brown.
- Cinnamon and vanilla round out the fruit with warm, familiar notes.
- Melted butter coats the dough and keeps every layer rich and tender.
For equipment, you will want two cookie sheets for roasting, a rolling surface, and two 9×13 baking dishes. A pastry brush makes spreading the butter and honey much easier.

How to Make Roasted Strawberry Sweet Rolls
Making roasted strawberry sweet rolls comes down to roasting the fruit, filling the dough, and baking until golden. Here is the friendly overview before you head to the recipe card.
- Roast the strawberries in a single layer at 375 degrees for 20 minutes, then drain them well.
- Mix the drained berries with orange juice concentrate, vanilla, and cinnamon.
- Roll each half of dough into a 30×10 inch rectangle, then brush with butter and honey.
- Spread the berry filling, roll it up toward you, and slice into 1 and a half inch pieces.
- Bake in buttered pans at 375 degrees for about 20 minutes until golden.
This recipe makes 16 rolls across two pans, so it scales nicely for a brunch. To get ahead, you can roast the berries a day early and keep them chilled, then assemble and bake fresh in the morning.

Storage Options
These strawberry sweet rolls keep well, which is handy since the recipe makes two full pans. Store them once they have cooled.
- Keep covered at room temperature for up to 2 days.
- Refrigerate in an airtight container for up to 5 days.
- Freeze unglazed rolls for up to 2 months, then thaw and warm before glazing.

Variations & Substitutions
There is plenty of room to make these roasted strawberry sweet rolls your own. Try one of these easy swaps.

- Use lemon zest in the dough instead of orange for a sharper citrus note.
- Skip the glaze and dust with powdered sugar for a lighter finish.
- Add a pinch of cardamom to the filling for a warm, floral edge.

Oh my goodness – these are such a brilliant idea!
Thank you Kristen!
Fabulous recipe Melanie and I agree, no adornment or glaze necessary for these! I love strawberries in and forms but this recipe sings to me as a 4th of July breakfast treat.
Yeah, sometimes things are sweet enough. I thought they were too sweet with a glaze. The kids thought differently.
Oh, my. Will you marry me?
Lol, Michael. I’ll take that as a compliment.
Whoaaaaa…. This is crazy good! I haven’t roasted strawberries before but from the look of those rolls, I think I’m tempted to try now.
Also, I’ve always loved Ree’s sweet roll recipe. My heart did a little happy skip when I saw that you used that. I have made lemon rolls using that same recipe too.
You just can’t go wrong with Ree’s recipe Jayne. They are pretty solid.
