Ingredients

- 24 oz fresh blueberries
- 1 cup plus 6 Tbsp sugar
- 1½ tsp cornstarch
- ½ cup lemon zest
- 2 Tbsp lemon juice
- 10 Tbsp butter melted
- 2 pounds confectioners sugar
- ½ cup lemon zest
- ⅓ cup milk
- juice of 1½ lemons
- 6 Tbsp melted butter
Instructions
- Preheat oven to 375º.
- Generously grease whatever pans you are using with butter. (I used 9×13 bakers) You don’t want to be spartan here. The butter is half the magic of these sweet rolls. Slather the pan.
- In a large mixing bowl, combine blueberries, 6 Tbsp sugar, cornstarch, 2 Tbsp lemon juice and zest. Gently stir to coat berries well. Set aside.
- For the sweet roll dough, I divide the dough in half, place it on a floured surface and roll out two long rectangles. In Ree’s recipe she suggests 30×10 inches. I just sort of eyeball it and roll it quite thin.
- Brush the dough generously with the melted butter. Sprinkle 1 cup of sugar over top the melted butter on both rectangles.( ½ cup sugar over each separate rectangle) Spoon the blueberries out evenly over the top of the buttered/sugared dough.
- Roll the dough tightly toward you to form your dough logs. Once the log is rolled up, gently press the seam into the dough to seal.
- I like my sweet rolls to be on the taller side, so I slice my rolls in 1½ inch slices. Make three rows of three if you are using a 9×13 baker. You need to give them room to spread.
- Cover them with a towel and let sit for a half of an hour.
- Bake in a 375º oven until golden. About 18 to 20 minutes.
- For the glaze, mix all ingredients until smooth. Slather over sweet rolls as soon as they come out of the oven.
- This recipe makes a lot. Two full 9×13 pans when sliced in 1½ inch slices.

how many lemons do you need for 1 whole cup of zest?
I believe an average sized lemon will yield 1 Tbsp of zest. There are 12 Tbsp in 1 dry measure cup, so I’m thinking you’d need 12 lemons! Wow, that’s a lot of lemons, but these sweet rolls sure look good!

Thank you for sharing this delicious recipe. I started dough last night, refrigerated overnight, and baked them off this morning. They were a big hit, but wanted to share a couple of insights for others who might follow a Pinterest link and end up reading this…
1) I had only 1/2 the amount of berries in the original recipe (12 oz, not 24), so back by half the other berry-related ingredients in similar amounts. It was still sufficiently berry-studded.
2) I used only 1/2 the butter and 1/2 the sugar at the point where you slather the rolled out dough with butter and sprinkle with sugar. It was still sweet and gooey.
3) I found myself wondering if the 2 lbs of confectioner’s sugar in the glaze recipe must be a typo? I made frosting using about 1 1/2 c of confectioner’s sugar, 1 T cream cheese, 1 1/2 T softened butter, and about 1-2 T lemon juice (until it was the right consistency). I have at least 1/2 of it left after drizzling it over 2 pans of rolls.
4) The original recipe calls for a 1 cup lemon zest (1/2 c each at two points in the recipe). I zested 2 lemons and got about 3-4 tablespoons total, far short of 1 cup. I don’t know how many lemons you’d have to zest to get a full cup of zest, but I way more than 2. My batch was sufficiently lemony and lovely.
