Black bottom whiskey pecan cookies are the grown-up cookie your dessert tray has been missing. A full cup of pecans gives them serious crunch, a splash of whiskey adds warmth, and a layer of dark chocolate across the bottom keeps things playful. They are thin, lacy, and a little fancy without much fuss.

What Makes These Black Bottom Whiskey Pecan Cookies Special
- A whole cup of pecans for big, toasty crunch
- A splash of whiskey for a warm, grown-up note
- Dark chocolate bottoms that crack with every bite
- Tart dried cranberries woven through the batter

These come together in a single pot, no mixer required, which makes them friendlier than they look. The dough is loose and buttery, so they bake up thin and crisp at the edges.
Bake just a half dozen at a time; these cookies spread a lot and need room.

Why You’ll Love These Black Bottom Whiskey Pecan Cookies
- The edges turn thin and lacy while the centers stay packed with toasty pecans.
- A splash of whiskey rounds out the sweetness without overpowering it.
- These whiskey pecan cookies feel a little fancy, so they shine on any holiday plate.
Ingredient Notes
These are just notes on the key players, and the exact measurements in the recipe card below have everything you need. The ingredient list is short, so quality really shows here.
- Pecans are the heart of the cookie, so chop them coarsely for the best crunch.
- Whiskey adds a warm, mellow note; a smooth bourbon works nicely.
- Dark chocolate morsels melt into the glossy bottom layer.
- Dried cranberries bring a little tartness to balance the sugar.
- Corn syrup helps the cookies spread thin and crisp.
You will want a medium pot, a few cookie sheets lined with parchment, and a double boiler for the chocolate. A small offset spatula makes spreading that bottom layer much easier.
How to Make Black Bottom Whiskey Pecan Cookies
Making black bottom whiskey pecan cookies starts on the stovetop, where you melt everything into a smooth caramel-like batter. Then you bake, cool, and finish with chocolate.
- Heat the oven to 375 degrees.
- Over medium heat, melt the butter, sugars, corn syrup, and whiskey until smooth.
- Off the heat, stir in the salt, flour, cranberries, and pecans until combined.
- Drop rounded tablespoons onto the sheet, only 6 at a time since they spread.
- Bake about 8 minutes, until golden, then cool 5 minutes on the sheet.
- Spread melted chocolate across each cooled bottom and let it set on parchment.
This batch is on the smaller side, so it doubles cleanly if you need more for gifting. The cooling steps matter; give them the full 5 minutes on the sheet before you move them, or the lacy edges will tear.
Storage Options
These whiskey pecan cookies keep their crunch when stored properly. Let the chocolate set fully before stacking them.
- Store in an airtight container at room temperature for up to 4 days.
- Layer with parchment so the chocolate bottoms do not stick together.
- Freeze in a sealed container for up to 1 month; thaw at room temperature.
Variations & Substitutions
This recipe takes well to small tweaks if you want to make it your own. A few easy swaps change the character without changing the method.
- Swap the whiskey for bourbon, rum, or a splash of vanilla for an alcohol-free version.
- Use walnuts in place of pecans if that is what you have.
- Trade dried cranberries for cherries or chopped dried apricots.
- Sprinkle a little flaky salt over the chocolate before it sets.
What to Serve with Black Bottom Whiskey Pecan Cookies
Black bottom whiskey pecan cookies sit comfortably on a mixed dessert tray. Pair them with other small bites and a warm drink.
- A mug of coffee or a small pour of the same whiskey.
- These rich chocolate stout cookies with Irish cream frosting for another grown-up treat.
- Salty-sweet cookie butter popcorn bars to round out a snack board.
- A scoop of vanilla ice cream for an easy plated dessert.
A few questions tend to come up before the first batch, so here are quick answers.
Frequently Asked Questions
Can I make black bottom whiskey pecan cookies without alcohol?
Yes. Replace the whiskey with a splash of vanilla extract or apple cider. You lose a little warmth but keep the texture intact.
Why did my cookies run together?
They spread a lot, so bake only about six per sheet with plenty of space between each spoonful.
Can I skip the chocolate bottoms?
You can, and the cookies are still tasty. The dark chocolate adds a snap and a sweet contrast that is worth the extra step.
Pack a few in a tin and you have an instant, thoughtful gift. They travel well once the chocolate has fully set.

Making these tomorrow. After melting the chocolate in the double boiler you spread on the bottom of each cookie then put warm chocolate side down onto the parchment or warm chocolate side up to dry? Thanks!!!! Oh and how big are the final cookies?
Yes, exactly. Just spread chocolate on the bottom and place on parchment to cool. They spread, so be careful to space properly. The size depends on how much you scoop onto the cookie sheet. Mine are about two inches in diameter.
This sound great! The only question I have is what do you do with the two Tbs cream? I don’t see it in the directions.
