Why You’ll Love These Cookie Butter Popcorn Bars
- The mix of crunchy popcorn and chewy cookie butter is pure fun to eat
- That spiced Biscoff flavor plays perfectly against dark chocolate
- These cookie butter popcorn bars come together with zero baking
Ingredient Notes
Here are the notes that help most; the exact measurements in the recipe card cover the rest. Cookie butter and Biscoff cookies are the stars, so use both for the deepest flavor.
- Popcorn lightly buttered and salted for the salty-sweet balance
- Biscoff cookies crushed into the mix for crunch and spice
- Cookie butter or Biscoff spread as the rich, spiced binder
- Marshmallow Fluff and corn syrup to hold everything together
- Semi-sweet chocolate and heavy cream for the ganache dip
You will need a large stockpot for melting, a second big pot or bowl for mixing, and a greased 9×13 pan. Parchment paper makes the dipped bars easy to set and store.

How to Make Cookie Butter Popcorn Bars
Cookie butter popcorn bars are a quick stovetop project with a chill in the middle. The trick is moving fast while the cookie butter mixture is hot and pourable.
- Grease a 9×13 pan and set it aside
- Melt the corn syrup, cookie butter, Fluff, and butter for about 5 minutes until ribbony
- Pour half over the popcorn and crushed cookies, stir, then add the rest and coat well
- Press the mixture firmly into the pan and refrigerate 1 hour
- Cut into squares, then melt the chocolate and stir in the cream for ganache
- Quickly dip the bottom of each bar and chill until set
This batch makes about 12 bars and can be doubled if you press it into a second pan. You can make the bars up to 2 days ahead and keep them chilled until serving.

Storage Options
Because of the marshmallow and ganache, these cookie butter popcorn bars do best cold. Keep them chilled until just before you serve.
- Refrigerate in an airtight container for up to 1 week
- Layer with parchment so the dipped bottoms do not stick together
- Freeze well wrapped for up to 1 month, then thaw in the fridge

Variations & Substitutions
These cookie butter popcorn bars take well to small swaps. Have fun making them your own.
- Dip in white chocolate for a sweeter, milder finish
- Sprinkle flaky salt over the ganache before it sets
- Stir mini chocolate chips or chopped nuts into the popcorn mix
- Use gingersnaps in place of some of the Biscoff cookies for extra spice

What to Serve with Cookie Butter Popcorn Bars
Cookie butter popcorn bars are a treat all on their own, but they really shine on a dessert table. Pair them with a few other handheld sweets and something warm to sip.
- A mug of coffee, chai, or cold milk to balance the sweetness
- A scoop of vanilla ice cream alongside a bar
- A spread of bars including these caramel apple pie bars
- Or these salty-sweet peanut butter pretzel bars for the dessert tray

Before you melt that first pot of cookie butter, here are the questions readers ask most.
Frequently Asked Questions
What is cookie butter in these popcorn bars?
Cookie butter is a creamy spread made from speculoos cookies, sold as Trader Joe’s Cookie Butter or as Biscoff Spread. Both taste nearly identical and work the same here.
Why are my bars falling apart?
They were likely not pressed firmly enough or chilled long enough. Pack the mixture down hard and give it a full hour in the fridge before slicing.
Do I have to dip them in chocolate?
No. The bars are great plain, but the ganache bottom adds richness. You can also drizzle chocolate on top instead of dipping.
Can I make them ahead?
Yes. They keep in the fridge for up to a week, so they are perfect for prepping a couple of days before a party.
Rich, chewy, and crunchy all at once, these bring a little balance to any table full of light spring desserts. Make a batch and watch them disappear before anything else.

Oh my! Your Cookie Butter Popcorn Bars look fabulous and sound even better Melanie!! What a perfect treat. The kids are going to love this and truth be told, so will I! I can’t wait to try these. Happy Easter!
Yes, a kid pleaser for sure. I hope you enjoy them!
You had me at ganache. Wait, no, strike that. You had me at cookie butter. Wait, no, strike that. You had me at butter.
I’m definitely making these soon! Now, to find this stuff at Walmart…no Trader Joes for 30 miles. I wonder if Sprouts or Whole Foods might have it….
Ha! Yes, you can’t go wrong with either ganache or Cookie Butter! Walmart will be your best bet. I haven’t seen it at Whole Foods.
Found both cookies and spread at HEB. Melanie, these are the best thing I’ve eaten in a long time. Wow! I had to take most of them up to school so I wouldn’t eat the whole thing. And so many possible variations – peanut butter, cashew butter, Nutella…. I found it hard to mix. My cookies sank to the bottom and even my biggest bowl wasn’t big enough so I used two. If you have any tricks they would be most welcome. By the way, I made 1/2 with ganache and 1/2 without and despite loving everything ganache I think I like them better without.
Argh… when will cookie butter arrive at our shores? It always takes ages before some new trendy food product reaches us here. I can only sit here, Pin this and wait for the day I get my hands on some Biscoff spread.
Oh Jayne! Don’t feel too bad. I’m always coveting your produce!! You have such variety over there!
I just made them today and they are amazing!!!!!!
I am so thrilled that you liked them. Thank you so much for taking the time to give me feedback.
