Pineapple coconut and rum loaf tastes like a slice of warm-weather vacation, no plane ticket required. The crumb stays moist thanks to crushed pineapple, while toasted coconut and a splash of white rum bring island flavor to every bite. It is a simple loaf that feels a little special.

This loaf started with a trip to Costa Rica. Every morning, room service brought a big Costa Rican breakfast piled with rice and beans, plantains, ham, and that wonderful fried cheese, and I wanted to hold on to a little of that tropical feeling once I was back home. The pineapple and coconut in this loaf are my easy way to do it.

A Loaf That Tastes Like the Tropics
- Crushed pineapple keeps the crumb soft and moist for days
- White rum shows up in both the batter and the glaze
- Sweetened flake coconut adds chew and toasty flavor
- One bowl of mixing and a single loaf pan keep it easy

This loaf comes together with pantry staples and one standard pan. It is the kind of bake you can pull off on a quiet afternoon and serve for days.
Let the loaf cool completely before glazing, or the rum glaze will slide right off.

Ingredient Notes
A quick walk through the key ingredients will help you shop with confidence. You will find the exact measurements in the recipe card below, so think of this as a heads-up on what matters most.
- Crushed pineapple brings moisture and natural sweetness; drain it only lightly so the batter stays soft.
- Sweetened flake coconut folds into the batter and tops the glaze for extra texture.
- White rum flavors both the loaf and the glaze; it bakes mellow and warm.
- Butter and sugar creamed together give the loaf its tender, fluffy base.
- Vanilla extract rounds out the tropical flavors with a soft, sweet note.
For equipment, you will need a stand mixer or hand mixer, a standard loaf pan, and a whisk for the glaze. A small skillet helps if you want to toast the coconut garnish.

Frequently Asked Questions
Does the pineapple coconut and rum loaf taste strongly of alcohol?
No, the rum in the batter bakes mellow and warm, and the glaze adds just a light, pleasant note rather than a boozy punch.
Can I make this loaf without alcohol?
Yes, swap the rum for pineapple juice or milk in both the batter and the glaze, and it will still be moist and flavorful.
Do I need to drain the crushed pineapple?
Drain it lightly so the batter is not too wet, but keep a little of the juice to help the crumb stay tender.
