Roast chicken with prosecco is the one-pot dinner that finally gets everyone at the table to agree. Crisp pan-fried chicken simmers in a bubbly prosecco sauce loaded with herbs and butter, finished with a swirl of cream. It is the kind of meal you mop up with crusty bread.

Why This Prosecco Roast Chicken Wins Dinner
- Everything cooks in one Dutch oven for easy cleanup
- A rich herb sauce built on prosecco and pan drippings
- Crispy skin from a slow, undisturbed sear
- A finishing swirl of cream makes it feel special

Chicken is a weeknight regular, so it helps to have a few new ways to serve it. This sauce does the heavy lifting and turns simple bone-in pieces into something worth slowing down for.
Leave the chicken alone while it sears; that patience is what gives you crispy skin.

Why You’ll Love This Roast Chicken with Prosecco
- This roast chicken with prosecco brings together crispy skin and a silky, herby sauce
- The bubbly wine pairs naturally with poultry and keeps the sauce bright
- A swirl of cream at the end makes the whole pot taste a little decadent
Ingredient Notes
These notes will help you shop and swap with confidence; you will find the exact measurements in the recipe card below.
- Bone-in, skin-on thighs and drumsticks stay juicy and give you that crispy skin
- Prosecco is the heart of the sauce, though any dry champagne works just as well
- Shallots and fresh oregano build a gentle, savory base; Herbs de Provence rounds it out
- Heavy cream and butter turn the pan juices into a rich, glossy sauce
For equipment a Dutch oven is ideal since it moves from stovetop to oven, but a deep oven-safe skillet works too. Keep a wooden spoon handy for loosening the browned bits.

How to Make Roast Chicken with Prosecco
Making roast chicken with prosecco is a sear, a simmer, and an easy oven finish. Here is the quick overview before you check the card for the full method.
- Heat the oven to 350 degrees and melt the butter and oil in a Dutch oven
- Season and lightly dredge the chicken in flour, then sear undisturbed 10 minutes per side
- Set the chicken aside and saute the shallots for 4 to 5 minutes
- Pour in the prosecco, stock, and herbs, scrape up the browned bits, and simmer 10 minutes
- Return the chicken, cover, and roast 30 minutes, then stir in the cream and serve
This recipe feeds about 4 and is easy to stretch by adding a few extra pieces and a splash more stock. Hold the cream until the very end so it stays smooth and does not break.

Storage Options
This prosecco chicken keeps well, and the sauce only gets cozier as the flavors settle.
- Refrigerate in a sealed container for up to 3 days
- Freeze the chicken and sauce for up to 2 months, though the cream sauce may separate a little
- Reheat gently on the stovetop over low heat so the sauce stays smooth

Variations & Substitutions
This herby chicken dish is flexible, so adjust it to what you keep on hand.
- Use any dry sparkling wine in place of prosecco
- Swap fresh thyme or tarragon for the oregano
- Stir in a handful of mushrooms with the shallots for more depth
- Leave out the cream for a lighter, brothier sauce

Frequently Asked Questions
What kind of wine works for roast chicken with prosecco?
Any dry sparkling wine does the job. Prosecco is bright and a little fruity, but a brut champagne or cava works just as well.
Why dredge the chicken in flour first?
The light flour coating helps the skin crisp and thickens the sauce slightly as everything simmers together.
Can I make this ahead?
Yes. Cook it through, then reheat gently over low heat. Stir the sauce as it warms so the cream stays smooth.
Does the alcohol cook off?
Most of it simmers away during the cooking time, leaving behind the bright flavor of the wine.
Set this one out the next time you want a dinner that feels a little fancy without much fuss. Crispy chicken and a buttery herb sauce make it an easy crowd-pleaser.

Ingredients
- 2 lbs chicken thighs and drumsticks I used bone in with skin
- 3 Tbsp butter
- 2 Tbsp olive oil
- salt and pepper to taste but be generous with the pepper
- ½ cup flour
- ⅓ cup shallots diced
- 1.5 cups Prosecco or any champagne
- 1.5 cups chicken stock
- 1 Tbsp fresh oregano chopped (see notes)
- 1 tsp Herbs de Provence
- ½ cup heavy cream
- salt and pepper to taste
Instructions
- Preheat oven to 350º.
- In an Dutch oven, heat butter and oil over medium heat.
- Season chicken with salt and pepper. Lightly dredge in flour. Place in skillet and let the chicken cook for ten minutes undisturbed. This is what creates that wonderful crispy skin. After ten minutes, turn the pieces and cook an additional ten minutes. Remove chicken and place on a plate. Set aside.
- Add shallots to the pan. Saute until translucent, 4-5 minutes.
- Add Prosecco, stock and herbs. Using a wooden spoon, loosen the crusty browned chicken bits from the bottom of the pan. This is the good stuff and it will add so much flavor to the final dish. Simmer for ten minutes.
- Add chicken pieces back to pan, cover and place in the oven for thirty minutes. At that point, remove chicken from pan and pour in the cream. Season with salt and pepper to taste. Give it a good stir and add chicken pieces back in. Serve immediately.
