Unlike the vast majority of comments I made the dish. For crying out loud people are you so hard up for attention? I did like this and was a breeze to make. The only thing I changed was I used English Muffins to nest the dish. Very flavorful and the chewy muffin was great. I used the muffin only because I didn’t have soft tortillas. Also a bit less messy. But by all means I would use them if I had them. I guess this was a little fusion.
