Veggie and sausage pasta bake is what lands on my table when the air turns cool but the garden is still going strong. It pulls together colorful summer produce with hearty sausage and a creamy ricotta base. Think of it as a gentle bridge between salad season and full-on comfort food.

Cozy Harvest Veggie and Sausage Pasta Bake
- Creamy ricotta and parmesan coat every bite
- Uses whatever veggies you have on hand
- Hearty Italian sausage makes it filling
- One baker, golden top, easy weeknight win

The beauty here is how flexible it is. Peppers, squash, zucchini, whatever is crowding your crisper drawer all work. Toss it with pasta and a rich cheese mixture, then bake until the top turns golden.
Cook the pasta just under al dente so it doesn’t turn mushy once it bakes.

Why You’ll Love This Veggie and Sausage Pasta Bake
- The ricotta and cream make it rich and tender without being heavy or gluey.
- This sausage and vegetable pasta bake is endlessly flexible, so no two batches have to taste the same.
- It hits that sweet spot between bright summer color and cozy fall comfort.
Ingredient Notes
These notes cover the main pieces. You’ll find the exact measurements in the recipe card down below.
- Italian sausage brings the savory backbone; hot or mild both work.
- Assorted veggies are your choice; peppers, squash, and zucchini are great picks.
- Ricotta cheese makes the sauce creamy and rich.
- Parmesan adds salty, nutty depth throughout.
- Eggs help the cheese mixture set as it bakes.
- Pasta is the base; a short shape like rotini holds the sauce well.
A large skillet does the early work of browning the sausage and softening the veggies. You’ll need a big mixing bowl to fold everything together, and a 9×13 baker is the right size to spread it all out for an even, golden top.

This veggie and sausage pasta bake comes together in a few easy stages. You’ll brown, saute, mix, and bake; that’s really it.
- Heat the oven to 350 degrees.
- Brown the sausage in a large skillet, drain it, and save about 2 tablespoons of the fat.
- Saute the shallots in that fat until soft, add the veggies for 3 to 4 minutes, then the garlic for 2 more minutes.
- In a big bowl, stir together the ricotta, cream, parmesan, eggs, salt, and pepper.
- Fold in the cooked pasta, sausage, and veggies until everything is coated.
- Spread it in a 9×13 baker and bake 30 to 35 minutes, until the top is golden.
This recipe feeds about 6, and it scales up nicely if you double it across two dishes. You can assemble it ahead and refrigerate for up to 1 day, then bake when you’re ready.

What to Serve with Veggie and Sausage Pasta Bake
A veggie and sausage pasta bake is a full meal on its own, but a couple of sides round it out. Here’s what works.
- A crisp green salad with a sharp vinaigrette.
- Warm, crusty garlic bread for scooping up the sauce.
- Roasted vegetables if you want to lean even harder into produce.
- For another cozy pasta night, try my BLT macaroni and cheese later in the week.

Good morning Melanie. I love this post, the pix and the recipe. Technically we have 3 more weeks of summer but I know exactly what you are saying. I love all the veggies and color of this recipe. I love the phrase; “a slightly rebellious meal” and the way you describe the roux as having a sexy golden color even though you used ricotta and egg instead. I can’t wait to try this recipe!
Thank you, you answered the question of what should we have for dinner tonight? I tried a veggie pasta bake recently that I did not like, so I can vouch for your recipes being good and therefore I won’t be spending my time and energy on a dish no one liked. 🙂
This looks so yummy and like something I could actually do! Thank You Melanie!
I made something so similar to this just last night for dinner! Was amazing…even though I put too many jalapenos in it – or they were spicier than I thought! 😀
