Ingredients
- 1 large roaster I used an 8lb bird
- 1 Tbsp garlic powder
- 2 tsp kosher salt
- fresh ground black pepper to taste
- 2 large sweet onions sliced
- 1 to 2 Anaheim peppers diced (or any other spicy pepper, see notes)
- 6 garlic cloves minced
- 2 Tbsp olive oil
Instructions
- Preheat oven to 350º.
- Place bird in a large roasting pan. In a small mixing bowl, combine garlic powder, salt and black pepper. Massage the mixture all over the bird. (even the underside)
- Place onions, peppers and minced garlic cloves on top of the bird. Be sure to stuff some of the veggies into the chicken cavity too.
- Drizzle olive oil over top. Cover with tin foil and roast for 40 minutes. After 40 minutes, remove tin foil and finish cooking until the internal temp of the breast meat is 165º and the juice run clear.
