Brie with brandied cranberries is the kind of appetizer that looks fancy but takes almost no effort. A wheel of brie goes soft and warm in the oven under a glossy topping of cranberries, figs, and onion simmered with a splash of brandy. It is sweet, tart, savory, and ready to scoop in about half an hour.

Ingredient Notes
These notes are about what each part brings to the dish, not amounts. You will find the exact measurements in the recipe card below, so read here for the why.
- Brie is the creamy base; a small wheel melts evenly and scoops easily.
- Fresh cranberries bring the tart pop that balances the sweetness.
- Figs add a jammy, mellow sweetness and a little texture.
- Brandy and brown sugar reduce into a glossy, glazed topping.
For equipment, you need a large saute pan, a small oven-safe baker that fits the brie, and crackers or crusty bread for serving. A rubber spatula helps you spoon every bit of topping over the cheese.

How to Make Brie with Brandied Cranberries
This brie with brandied cranberries comes together in two quick stages: the topping on the stove, then the bake. Here is the friendly walkthrough.
- Heat the oven to 400 degrees and set the brie in a suitable baker.
- Melt the butter and cook the onions for 3 to 4 minutes until softened.
- Add the figs, cranberries, brandy, brown sugar, and salt and cook 5 more minutes.
- Spoon the fruit and onion mixture over the brie.
- Bake for 20 minutes, until the cheese is soft and the topping is bubbling.
- Serve right away with crackers or crusty French bread.
This serves about 6 as an appetizer, and you can double the topping for a larger wheel if you are feeding a crowd. You can cook the cranberry fig mixture up to 2 days ahead and refrigerate it, then top and bake when guests arrive.

Baked brie is best fresh, but leftovers still have a place. Keep the cheese and topping covered once cooled.
- Refrigerate leftovers in an airtight container for up to 3 days.
- Reheat gently in a 325 degree oven for 10 minutes to soften the cheese again.
- Store extra cranberry fig topping on its own for up to 5 days.

- Use dried cranberries if fresh are out of season; reduce the cook time slightly.
- Add a handful of toasted pecans to the topping for crunch.

This looks terrific!
Thank you!
And just think, in a few more years, you may be bringing a dish to one of your children’s apartments while they scramble to make the turkey. ;o)
Happy Thanksgiving

You have NO idea how much I’m looking forward to that, Lee. I’ll gladly bring them their favorite pie! Lol!
This is going to be made for our Christmas dinner….Turkey day is tonight at my house…no time to change things up now. Looks yummy!
Thanks Jen! Good luck tonight! And have a happy Thanksgiving!
Such perfection! And way easier than with the phyllo pastry. Not that that’s difficult at all, but I had one burst once in the oven – and I was catering. My only mishap during all of those years, but it still haunts me!
Been there, done that Mimi! That is so frustrating. That’s why I love this recipe. Stressless. Happy Thanksgiving!!
So yummy Melanie, I love baked cheese!! xx
Thanks Amy! Yup, baked cheese is one of my weaknesses. Which is why I don’t make it very often.
Good morning Melanie! I am just now recovering from my food coma and Black Friday shopping and catching up on my favorite blogs, yours! This looks and sounds like a fabulously tasty, simple and elegant appetizer! And God knows we can use simple and elegant during the holidays! I can’t wait to try this recipe, maybe even use some of those leftover cranberries! I hope you and yours are having a wonderful holiday weekend.
I LOVE brie so will definitely be trying this one! Thanks for sharing.
Melanie….I commented when you posted this and then things happened and I was not able to make it for Christmas as planned. I AM making it for Thanksgiving this year, though…I have been salivating for nearly a year. What are your thoughts on preparing the fruit mixture several days in advance and assembling just before baking?
